INGREDIENTS
Plantains, preferably unripe green ones
Oil for frying, I prefer coconut oil here, but lard or sunflower oil will work
Avacado, sliced
cilantro leaves

FOR THE SAUCE
1/2 cup sour cream
1-2 chipotle chilies
6 sprigs of cilantro
A pinch of salt
The juice of 1/2 lime
The sweet pickling syrup of the chipotles, if using my recipe for sweet pickled chipotles (recipe link below)

Place all of the sauce ingredients in the container of your blender and blend until smooth. Adjust for seasoning, it should be sweet, sour, salty and spicy. Refrigerate until ready to use.

Cut your plantains into 1” chunks, peel and set aside. In a frying pan heat about 1/4 cup of oil. Fry the sides of your plantains until light brown. You do not want to fry the cut end the first time around, so just fry the round sides. Remove from the heat and allow them to cool enough to handle. Set the plantains cut side down on a cutting board and smash them to 1/2” (3-4cm) thick. A flat bottomed glass or measuring cup dipped in oil works well here. Fry them a second time over medium heat until they are golden brown and crisp around the edges.

Serve them with a dollop of chipotle cream, a slice of avocado and a sprig of cilantro.

If you’d like to make these ahead of time, omit the garnishes and refrigerate the fried plantains for a couple hours. Just before serving bake them in a 375 oven for 10 minutes or until they are hot. Garnish immediately and serve.
